Mariano Gascon directs product and food technology developments through Wixon’s staff of food technologists, flavorists, and research professionals, and also leads the team of flavor chemists at Wixon. He joined the staff of Wixon, Inc. in 1997 as Flavor Lab Director from Virginia Dare (New York) and IFF (Mexico). His experience in creating flavors spans nearly 20 years and includes many successes in developing new products and masking unwanted notes for clients.
Presented with real flavor problems from Wixon customers, the flavor lab team, under Mariano’s direction, developed the Mag-nifique™ line of products. The research and testing completed by this team led to flavor modifiers that are leading the flavor and spice industry.
Mariano is a Certified Flavor Chemist and has served as president of the Society of Flavor Chemists. He also is a member of the Institute of Food Technologists (IFT) and the American Association of Candy Technologists (AACT). Gascon is known internationally for his work in flavors and ingredients and recently has been published in “Masking agents for use in foods in modifying flavour in food (2007)” for his work in flavor masking technology.
He is a native of Mexico City, Mexico, and resides in Chicago.
He earned a bachelor’s degree in Biochemical Engineering and a major in Food Sciences from National Polytechnic Institute in Mexico City, Mexico, a master’s degree in Product Development at Northwestern University and a Chef certificate from Kendall College
